Persimmon Cake

My parents sent me a box of goodies for the holidays, I thought maybe I might be getting that new TV I’ve been asking for but no they sent something else. Inside the box, 18+ persimmons!

What are persimmons you ask? Why they’re delicious!!

Yeah I know this picture doesn’t do this fruit any favors because that one to the right looks like it’s ready to die, the one at top looks like it’s got a worm in it! FEAR NOT THOUGH! Those two are actually really ripe and sweet! Good for your tummy! So what do you do with 18+ pieces of fruit? First you give as MANY away as you can! Spread the wealth what ever is left over then you use that, which is what I did. So of the 18+, I kept 12. I know I’m greedy!

Now I call my mom who gives me her recipe for it. Yup once again, Mom’s recipe! So it’s got to be good right!?!?

Let’s see what the recipe says.

Look at that, so that’s how you make buttermilk!!!!

  • 2 cups of flour
  • 2 cups of sugar
  • 1 cup of oil (I used Vegetable Oil, you can use whatever oil you want… well maybe not 10w-30 motor oil)
  • 4 eggs
  • 1/4 cup of butter milk
  • 2 tsp of baking soda
  • 1 tsp of ground cinnamon
  • 3 cups of persimmons (about 7 of these bad boys)
  • Then bake at 350 degrees for about 45 mins.

So let’s begin. I bring out the bowl and start adding the ingredients.

Then add your flour.. then let’s see.. add some brown stuff, that thing called cinnamon.

Then add 4 eggs..

Then you mix it…

Using the egg beater probably isn’t a good idea to mix this cuz it gets thick and i haven’t even added the oil. Okay let’s just cut to the jist of it, add your oil and buttermilk and MIX!!

Now the fun stuff, get those persimmons ready, it’s time to grind them up. I used a food processor cut up 7 of them. SOOOO MUCH EASIER!!! Once it’s done you’ll have something like this.

Yummy right? Looks like Baby Food or to some of you, vomit… or to some… uhh…wait nevermind. Your batter should be ready to go. Now just dump this in and MIX!

Once this is ready, you’re almost there. Now time to add them to some pans. I was able to fit these in 2 bread pans. I know it’s called a cake but maybe it’s really a bread.. what matters is you have something to bake it in.

I filled it halfway. Well time to put these in the oven and start baking. Set it to 350 degrees and let it bake.

Oh let’s see what it looks like after 35 mins

45 mins have now passed and I just poked it with a toothpick… nope.. not ready. Don’t know what the poke test is? Oh it’s simple, just poke the cake with a toothpick, when you pull out and it has dough on it still, that just means it’s not ready to go. Keep baking. I just added 15 mins to the bake time.

Will you look at that! YUM!! Okay so the middle kind of sank but that’s easily fixed, I think when I poured the batter in I didn’t even it out. Next time! Just going to let this cool down for about 20 mins before I open it up.

Now the real test, how this bad boy looks on the inside.
