Gyro! Gyro! Gyro!

Saw this recipe and had been itching to try.

For the Gyro Meat:
1 pound ground lamb
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons fresh oregano leaves
½ yellow onion, cut into 1-inch chunks
1 clove garlic, sliced
3 ounces slab bacon (or 5 slices sliced bacon), cut into ½-inch pieces

To Serve:
Pocketless pita bread
Tzatziki Sauce
Tomato, coarsely chopped
Yellow onion, thinly sliced

This should have been something that was EASY to make. I started around 12pm and ended up finishing around 4pm. LOL!! uhhh.. shouldn’t have taken that long!

So the fun part, mashing lamb and bacon!! Just squish it all in!

Now for the annoying part. My dumb ass decided to try and use my Vitamix as a food processor. Word to the wise, using the vitamix to mix the garlic and onions with the lamb and bacon is not a good idea. What was suppose to take like 5 mins at most, turned into an hour of figuring out why my Vitamix wasn’t spinning and then slowly processing the meat one handful at a time! On top of that, getting all the meat out of the Vitamix was a bitch!

Once I got it all mixed, I put it on the pan!

Then place this bad boy into the oven!

Once this reaches an internal temperature of 155 degrees, time to pull out. Your meat should look like this!

Now it’s time to slice and dice!

20160206_155045Because we’ve got to cook this one more time! Place this sucker back in the oven and BROIL it for about 5 mins. Just gonna get the edges brown.

Once it’s all cooked now you’re ready to eat, just need to add your Tzatziki Sauce! And yes I made it myself.

Now time to make the GYRO! This was quite an experience! Moving forward, I’m going to get that food processor!
